Production capacity for the bakery at the Naboro Maximum Corrections Centre continues to be shared between Food Security (60 %) and Commercialisation (40 %). There are six inmates and four officers based at the Unit to ensure daily demands are met. Two officers are on delivery duties. Inmates of the Maximum CC continue to be the source of labour for the Food Security bake which takes 8 hours per day ie. 0430 – 1200 hours. Production increases during events like the Hibiscus Festival, organized Markets Days and YRP special events when commercial demand increases. Current production per day stands at 1026. Commercial bread supply is mainly to the RFMF and Fiji Navy, the FCS and the National Fire Authority during their recruitment process. The focus remains at expanding the sale of bread to all Government institutions, civil servants and the public. Meanwhile, the supply of inmate rations to institution continues.
